Ingredients:

  • Ground beef (1 pound)
  • Butter (preferably high-quality, 1/2 pound) (estimate)
  • Salt (to taste)
  • Black pepper (to taste)
  • Brioche buns (as needed)
  • American cheese (as needed)
  • Oil (a small amount for grilling)
  • Burger sauce (mayo, ketchup, mustard, Worcestershire sauce, mixed to taste) (estimate)
  • Thyme (a few sprigs) (estimate)
  • Garlic (a few cloves, minced) (estimate)
  • Guga's rub or your choice of steak rub for the compound butter (estimate)

Steps:

Begin by placing the butter in the freezer. After about one hour, shred the cold butter.

Grind your own beef if you prefer a medium-rare burger, or use store-bought ground beef, ensuring it is cooked to 165°F. Place ground beef in a bowl and combine with the shredded butter, aiming for a 50% butter to beef ratio.

Form the beef and butter mixture into burger patties.

Prepare the brioche buns. If homemade, refer to the recipe provided in the description, or use store-bought brioche buns.

Preheat your griddle or pan, add a bit of oil, and cook the burger patties, seasoning them with salt and pepper. Flip the burgers once they have a nice brown crust and toast the buns. Add cheese to the patties and cover until the cheese melts.

Assemble the first burger: Spread the burger sauce on the buns, add the patty with melted cheese, and top with the bun.

For the second burger variation, toast the buns with butter until nicely browned, then spread more butter on the toasted buns. Cook balls of beef on a hot griddle, smashing them into patties, then season and cook until desired doneness. Stack patties with cheese on a buttered bun.

Make a compound butter with butter, thyme, garlic, and steak rub. Apply it to the buns and cook the burger patties without smashing. Season with salt and pepper. Toast the buns in burger fat. After flipping the burgers, add the compound butter, thyme, and garlic to the pan and baste the patties. Top the patties with cheese and baste again with the butter mixture.

Assemble the final burger: Spread compound butter on the bun, add the basted patty and top with another bun. This completes the butter basting version of the burger.
