The Recipe: Really Good Meatloaf

Ingredients:
- 1 medium yellow onion, roughly chopped
- Garlic cloves smashed (estimate: 2 cloves)
- 1-2 slim carrots, roughly chopped
- Olive oil (estimate: enough to coat the bottom of the pan)
- Salt (estimate: 1 teaspoon)
- Pepper (estimate: 1/2 teaspoon)
- 1/2 cup of breadcrumbs
- 1/4 cup of chicken broth
- 1/2 tablespoon of tomato paste
- 1 teaspoon of Dijon mustard
- 1 tablespoon of Worcestershire sauce
- A couple tablespoons of flat-leaf parsley, chopped
- 1 egg
- For the glaze:
- Heaped tablespoon of ketchup
- Tablespoon of molasses
- Tablespoon of cider vinegar
- A teaspoon of hot sauce (estimate: choice of hot sauce, to taste)
- A teaspoon of Worcestershire sauce
- Kosher salt and freshly ground black pepper (for seasoning)
Steps:

Dice up an onion. Dice up a couple of carrots. You can use the food processor or do it by hand.

Pre-cook the flavor base of onions, carrots, and garlic with olive oil, salt, and pepper.

Mix together 1/2 cup of breadcrumbs, 1/4 cup of chicken broth, 1/2 tablespoon of tomato paste, 1 teaspoon of Dijon mustard, 1 tablespoon of Worcestershire sauce, and a couple tablespoons of flat-leaf parsley.

Add 1 teaspoon salt, 1/2 teaspoon pepper, and 1 egg to the breadcrumb mixture.

Prepare the glaze with a heaped tablespoon of ketchup, a tablespoon of molasses, a tablespoon of cider vinegar, a teaspoon of hot sauce, and a teaspoon of Worcestershire sauce. Season with kosher salt and freshly ground black pepper.

Combine the cooked vegetables and the breadcrumb mixture with the egg. Add into ground turkey and mix just until combined.

Shape the meat mixture on a lightly oiled baking tray, forming a four by eight shape, and brush it with the glaze.

Bake in a toaster oven or regular oven at 350°F for 30 to 35 minutes.
