Ingredients:
- Eye of round (approximately 4.5 pounds)
- Kosher salt (1/4 cup)
- Ground black pepper (1 tablespoon)
- Granulated garlic (1 tablespoon)
- Smoked paprika (1 tablespoon)
- Cumin (1 tablespoon)
- Onion powder (1 teaspoon)
- Red pepper flakes (1 teaspoon, optional)
- Mustard as binder
- Horseradish (a few tablespoons)
- Soy paste (1 tablespoon)
- Worcestershire sauce (1/2 tablespoon)
- Olive oil (1 tablespoon)
- Parsley (a couple of tablespoons), chopped
- Butter (1 stick for the buns topping)
- Garlic paste (1 tablespoon for the buns topping)
- Cholula hot sauce (1 tablespoon for buns topping)
- Heavy cream (1 tablespoon, for buns)
- Egg (for buns wash)
- White American cheese (several slices)
- Mayonnaise (for dressing the buns)
- Grainy mustard (for dressing the buns)
- Brioche buns or homemade buns (12)
Steps:

Preheat oven to 500 degrees F. Prepare approximately 4.5 pounds of eye of round beef by trimming off the fat and silver skin.

Season the beef with a rub made from kosher salt, pepper, granulated garlic, smoked paprika, cumin, onion powder and optional red pepper flakes.

After seasoning, sear the beef in the oven at 500 degrees F for 15 minutes and then turn the heat down to 325 degrees F, cooking until it reaches an internal temperature of 123-125 degrees F.

Once the beef is fully cooked and has rested, slice it thinly using a slicer or by hand for the sandwiches.

Prepare homemade brioche buns by making a dough then forming into smaller slider buns if desired, and let rise.

Once risen, brush the buns with an egg wash mixed with cream.

Bake the buns in an oven preheated to 400 degrees F for 15 minutes or until golden brown.

Dress the sliced buns with mayonnaise, mustard, and slices of white American cheese.

Place the roast beef on the bottom buns, top with more cheese, and close with the top buns.

Make a butter mixture with butter, garlic paste, horseradish, Cholula, soy paste, and Worcestershire sauce for the bun topping.

Brush the butter mixture over the assembled sandwiches, cover with foil, and return to the oven.

Bake until the cheese melts, remove the foil and brush again with the butter mixture, then bake for another 10 minutes.

Serve the funeral sandwiches warm, with the melted cheese and flavorful roast beef in between the baked brioche buns.
