Ingredients:
- 1 lb 93% lean ground beef
- 1/2 yellow onion, diced
- 1 packet taco seasoning
- 1 can (14 oz) diced tomatoes with green chilies, undrained
- 1 cup white rice
- 2 cups beef bone broth
- (optional) 1/4 cup Mexican shredded cheese per serving
- (optional) sour cream
- (optional) salsa
Steps:

Brown 1 pound of 93% lean ground beef with 1/2 diced yellow onion in a large skillet over medium heat until the meat is completely browned.

Add 1 packet of your favorite taco seasoning to the browned meat and onions.

Add 1 can of diced tomatoes with green chilies (undrained) to the skillet and mix well.

Add 1 cup of white rice to the skillet and mix everything together. Then add 2 cups of beef bone broth and continue stirring.

Bring the mixture to a boil, then cover the skillet, reduce heat to low, and simmer for 20 minutes until the rice is cooked.

Once done, divide the mixture evenly into meal prep containers. This recipe makes 4 servings.

Top each serving with 1/4 cup of Mexican shredded cheese if desired.

Optionally, top with a little sour cream and salsa before serving.
