Mapo Tofu from My Hero Academia | Anime With Alvin

Ingredients:

  • 1 1/2 pounds firm tofu
  • 1 pound ground beef
  • (estimate) 1/4 cup vegetable oil
  • 10 grams dried red chilies
  • 5 grams green Sichuan peppercorns
  • (estimate) 1 inch piece of ginger, shredded
  • (estimate) 4 scallions, thinly sliced
  • (estimate) 1 tablespoon salt
  • 6 pickled red chilies, chopped
  • (estimate) 1 tablespoon ferment black beans
  • (estimate) 2 tablespoons Doubanjiang
  • (estimate) 2 tablespoons sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • (estimate) 2-4 tablespoons MSG
  • 2 cups water
  • (estimate) 1/2 cup chili oil
  • 2 curry cubes
  • pack of instant ramen
  • 1 egg

Steps:

Heat quarter cup vegetable oil in saucepan. Add 10 grams dried red chilies and 5 grams green Sichuan peppercorns. Toast until aromatic.

Set fried chilies and peppercorns aside. Finely crush them with back of cleaver.

Slice 1 inch ginger into shreds and thinly slice (estimate) 4 scallions.

Cut 1 1/2 pounds tofu into 3/4 inch cubes and blanch in salted boiling water for 2 minutes.

Heat (estimate) 1/2 cup oil in wok. Add 1 pound ground beef and stir fry until crispy.

Add chopped pickled red chilies and shredded ginger.

Add (estimate) 1 tablespoon fermented black beans and (estimate) 2 tablespoons doubanjiang, stir fry.

Add tofu to broth of 2 cups water. Season with salt, sugar, MSG.

Make cornstarch slurry with 2 tablespoons cornstarch and 2 tablespoons cold water. Stir into broth in 3 additions.

Plate tofu in a dish. Sprinkle fried chili peppercorn powder and scallions on top.

Take leftover tofu, add half cup of water to make broth.

Add 2 curry cubes to tofu broth.

Cook instant ramen and drain.

Pour mapo curry on noodles, place fried sunny side up egg on top. Sprinkle with scallions and chili oil. Serve.
