recipe by Nick DiGiovanni (@NickDiGiovanni)
Ingredients:
- 2 sticks of brown butter (1 cup, estimated)
- 1 cup of brown sugar
- 1/2 cup of granulated white sugar
- 1 teaspoon of homemade vanilla extract
- 1 and a half cups of cake flour (estimated)
- 1 and a half cups of regular flour
- 1 teaspoon of cornstarch
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 8 ounces of milk chocolate (chopped or broken)
- 1/2 cup of bittersweet chocolate chips
- 2 cups of chopped walnuts
Steps:
1
Heat up two sticks (1 cup) of cold brown butter until it loosens up.
2
Combine brown butter with 1 cup of brown sugar, 1/2 cup of white sugar, and 1 teaspoon of homemade vanilla extract.
3
Add 1 and a half cups of cake flour, 1 and a half cups of regular flour, 1 teaspoon of cornstarch, 3/4 teaspoon baking soda, and 3/4 teaspoon salt. Mix until combined.
4
By hand, crush in 8 ounces of milk chocolate, then mix in 1/2 cup of bittersweet chocolate chips and 2 cups of chopped walnuts until just combined.
5
Portion the dough to make about eight large cookies, and place them on a baking sheet. The cookies do not spread much, so keep them tall.
6
Bake the cookies in the oven at 415 Fahrenheit (212 Celsius) for about 8 to 12 minutes, based on your preference for gooeyness.
7
Open the cookies to reveal a gooey inside and a cooked outside, ensuring each cookie is unique in texture and chocolate distribution.
