How To Make The Best Burger Buns Of All Time

Ingredients:

  • 4 tablespoons (60g) whole milk, or almond milk
  • 2 tablespoons (27g) water
  • 2 tablespoons (20g) bread flour
  • 1/2 cup (120g) whole milk heated to 95°F (35°C) or non-dairy milk
  • 1 tablespoon (9g) instant yeast
  • 2 and 1/2 cups (320g) bread flour
  • 2 and 1/2 tablespoons (35g) sugar
  • 1 teaspoon (7g) fine sea salt
  • 1 whole egg, room temperature
  • 1 egg yolk, room temperature
  • 3 tablespoons (42g) unsalted butter, softened
  • For egg wash: 1 whole egg, a splash of whole milk

Steps:

Start by making a tangzhong. Combine 4 tablespoons (60g) whole milk, 2 tablespoons (27g) water, and 2 tablespoons (20g) bread flour in a small medium-sized sauce pot. Whisk together and heat over medium heat until thickened. This process will take about 2-5 minutes.

In the bowl of stand mixer, combine 1/2 cup (120g) of heated whole milk (95°F or 35°C), 1 tablespoon (9g) instant yeast, the prepared tangzhong, 2 and 1/2 cups (320g) bread flour, 2 and 1/2 tablespoons (35g) sugar, and 1 teaspoon (7g) fine sea salt. Add 1 whole egg and 1 egg yolk, both at room temperature. Start mixing on low speed to incorporate the ingredients.

Once the mixture starts coming together, add 3 tablespoons (42g) of softened unsalted butter. Mix until the dough is smooth and elastic, approximately 15 minutes. The dough should pull away from the sides of the bowl but will still be somewhat sticky.

Transfer the dough to a lightly floured surface and form it into a ball. Place it into a lightly greased large bowl. Cover with a damp towel or plastic wrap and allow to rise in a warm place until doubled in size, about 1-2 hours.

After the dough has risen, divide it into 6 equal pieces, each weighing about 95 to 105 grams. Shape each piece into a tight ball by pulling the sides to the center and pinching to seal.

Place the shaped dough balls onto a baking sheet lined with parchment paper, leaving enough space between each one for them to expand. Cover loosely with plastic wrap or a clean kitchen towel and let them rise again until puffy and nearly doubled, approximately 1 hour.

Preheat your oven to 375°F (190°C). Prepare an egg wash by mixing 1 whole egg with a splash of whole milk. Gently brush the surface of the risen dough balls with the egg wash.

Bake the buns in the preheated oven for 16 to 18 minutes, or until they're golden brown and sound hollow when tapped on the bottom. Remove from the oven and brush with melted butter for a soft, shiny finish.
