How To Make Authentic Curry Goat With White Rice

  • Goat meat (well washed and ready for seasoning)
  • Fresh thyme
  • Piece of ginger
  • 4 cloves of garlic
  • 1 whole scotch bonnet pepper
  • 1 teaspoon garlic plus (estimate)
  • 1/2 teaspoon scotch bonnet pepper, finely chopped (estimate)
  • 1 teaspoon Maggie's all-purpose seasoning (estimate)
  • 1 teaspoon Mrs. Dash, no salt (estimate)
  • 1 tablespoon minced garlic (estimate)
  • 1 carrot, chopped
  • 1 potato, chopped
  • 1/2 teaspoon turmeric
  • 2 big scoops (tablespoons) of curry powder
  • 2 pimento leaves
  • Basil (to taste, estimate)
  • 1/2 onion, chopped (estimate)

Steps:

Prepare the seasoning with 1 teaspoon of garlic plus, 1/2 teaspoon of scotch bonnet pepper, 1 teaspoon of Maggie's all-purpose seasoning, 1 teaspoon of Mrs. Dash with no salt, and a tablespoon of minced garlic.

For seasoning the goat, use fresh thyme, a piece of ginger, four cloves of garlic, and one whole scotch bonnet pepper. Puree these ingredients to make a marinade sauce.

Add two big scoops (estimating as tablespoons) of curry powder to the goat meat.

Mix the goat meat with the prepared seasonings thoroughly, ensuring the meat is fully covered with the seasoning.

Let the seasoned goat meat sit for half an hour to marinate properly.

Without adding oil, put the goat meat into a pot over the stove as the meat already contains enough fat.

After the meat has cooked for an hour and becomes tender, add chopped carrots and potatoes to the pot.
