Ingredients:
- 1 kg Sponge Gourd (Ridge Gourd/Turai) (estimate)
- 2 Onions (estimate)
- 2 Tomatoes (estimate)
- 3 tbsp Ghee
- 1/2 tsp Turmeric Powder
- A pinch of Kashmiri Red Chilli Powder
- A pinch of Freshly Crushed Black Pepper (estimate)
- A pinch of Garam Masala (estimate)
- Fresh Coriander (for garnishing) (estimate)
- Salt (to taste) (estimate)
Steps:

Select 1 kg of fresh sponge gourd (Ridge gourd/Turai) for this recipe. Choose the kind with a flat surface, known as sponge gourd.

Peel the sponge gourds and cut both the top and bottom ends. Then chop them into small pieces.

Also, finely chop 2 onions and 2 tomatoes and set them aside for later use.

Heat a pan and add 3 tablespoons of ghee to it.

Once the ghee is hot, add the chopped onions and sauté them for 3 to 4 minutes until they start to become translucent.

Add 1/2 teaspoon of turmeric powder and a pinch of Kashmiri red chili powder to the onions. Stir well.

Then add the chopped tomatoes and cook for about 2 minutes until the tomatoes are slightly mushy.

Add the cut sponge gourd to the pan, reduce the heat to medium-low, and cover the pan. Let it cook for about 10 to 15 minutes until the sponge gourd releases its water.

Stir the mixture occasionally and cook until the sponge gourd is soft and the water has evaporated.

Continue cooking until all the water dries up and the dish resembles a mashed consistency, indicating it's completely cooked.

Finish by adding a pinch of freshly crushed black pepper, a pinch of garam masala, and fresh chopped coriander. Stir well.

Serve the sponge gourd dish hot, preferably with roti or khichdi, as it makes for a delicious and nutritious meal.
