British bubble & squeak with spicy Latin beans

Ingredients:
- 1 pound (estimate) of red beans
- Water for soaking beans
- 1 shallot, thinly sliced
- 1 serrano chili, sliced into rounds
- A small bunch of cilantro, chopped (estimate)
- Zest of limes
- Juice of limes
- 1 spoonful (estimate) of sugar
- 1 large onion, chopped
- Cooking oil (estimate: 2 tablespoons)
- 1 pound (estimate) of tomatillos, chopped
- Chicken or vegetable stock (estimate: 2 cups)
- 1 big pinch of salt (estimate: 1 teaspoon)
- Pepper to taste
- Ground cumin (estimate: 1 teaspoon)
- Oregano (estimate: 1 teaspoon)
- Garlic powder (estimate: 1 teaspoon)
- Boiled carrots (estimate: 1 cup, chopped)
- Boiled potatoes (Yukon Golds or other, estimate: 2 cups, chopped)
- Boiled napa cabbage (estimate: 3 cups, chopped)
- Butter (estimate: 2 tablespoons)
- Fresh garlic, chopped (estimate: 3 cloves)
- Smoked Gouda cheese (estimate: 1 cup, grated)
- A little more lime juice for beans
- Sweetener of choice for beans (molasses, estimate: 1 tablespoon)
Steps:

Soak 1 pound of red beans in plain water overnight or for a couple of hours.

Prepare pickled condiments with thinly sliced shallot, serrano chili rounds, chopped cilantro, zest and juice of limes, and a spoonful of sugar.

Cook onions in oil, add the rest of serranos, chop tomatillos randomly, and put in the pot with onions to soften.

Drain soaked beans and add to the pot once the tomatillos are softening. Cover with stock, add a big pinch of salt, pepper, cumin, oregano, and garlic powder. Simmer until the beans are soft, which is about a couple of hours.

Boil water and cook carrots first as they take longer. After some time has passed, add chopped potatoes, followed by the napa cabbage.

As the potatoes become mashably soft, drain everything thoroughly and mash with butter, seasoning, and fresh garlic without it becoming homogenous.

Mix in smoked Gouda cheese, which helps bind everything together, taste, and adjust seasoning as necessary.

Bake the mashed mix as a casserole in a buttered dish, topped with the rest of Gouda cheese at 400 Fahrenheit or 200 Celsius for about 40 minutes until it's solid and brown.

Finish the beans with a bit of lime juice, a sweetener of your choice like molasses, salt to taste, and let the casserole cool and firm up before serving.
