BETTER THAN TAKEOUT AND EASY - Egg Fried Rice Recipe

Ingredients:
- Thai jasmine rice or any type of rice
- Vegetable oil
- Leftover or freshly cooked rice
- Eggs
- Bacon or your choice of protein
- 1 cup of frozen vegetable mix or fresh vegetables
- Salt and pepper or oyster sauce, soy sauce, dark soy sauce
- Diced green onion

Introducing the fried rice recipe using ingredients you already have in your kitchen.

Prepare your rice: Use leftover rice if available, otherwise cook your rice perfectly.
- If you don't have leftover rice, follow the steps to cook fresh rice.
- Start by rinsing your preferred rice type until water runs clear to remove excess starch.
- Drain the rice completely after washing.
- Add a drizzle of vegetable oil to a non-stick pot, mix well to keep the grains separate.
- Pour in one cup of water, swirl to even out the rice, then cook.

Cooking and resting the rice: Bring to a boil then let it simmer.
- Bring rice pot to a boil and then simmer for 10 minutes.
- Let the cooked rice rest and don't cook too long to avoid burning.
- You can use the rice to make fried rice immediately or let it cool.
- Chill the freshly cooked rice in the fridge to reduce stickiness.

Choose your protein and vegetables.
- Beat eggs well and set aside.
- Chose bacon or other meats as your protein, cut into bite-sized pieces.
- Use a cup of frozen vegetable mix or choice of fresh vegetables.

Start cooking.
- Add a tiny bit of oil to a carbon steel wok to prevent sticking.
- Cook bacon until golden and use the rendered fat for flavor.
- Remove excess oil if needed, leaving about 2-3 tablespoons.
- Fry the beaten eggs in the bacon fat, brown slightly if desired.
- Add and cook the vegetable mix until soft.

Finish the fried rice.
- Add the rice, increase the heat to high for 'wok hei'.
- Season the fried rice with oyster sauce, soy sauce, and dark soy sauce for color and flavor.
- Toss in diced green onion and mix again.
- Give it a final taste and adjust the flavor as needed before serving.
