Ingredients:
- Paneer (large pieces)
- Water
- Asafoetida (Hing) (estimate)
- Salt (estimate)
- Oil
- Onions
- Ginger-Garlic paste
- Green chilies
- Tomatoes
- Yogurt (not sour)
- Coriander powder (1 tablespoon)
- Garam masala
- Kasuri methi (roasted on tava)
Steps:

Cut paneer into large pieces and soak in hot water.

In the hot water, add asafoetida (hing) and salt, and mix well.

In a pan, add oil for frying. Roast the paneer pieces lightly so that the excess water is removed.

After frying, immediately transfer the paneer pieces into the previously prepared hot water to make the paneer soft and fluffy.

In hot oil, add finely chopped onions. It's essential to finely chop the onions as it forms the base of the gravy. Adding paste won't give the same texture.

Once the onions start changing color, add ginger-garlic paste mixed with some water. Brown the onions to a perfect texture and then add tomatoes.

Prepare a paste of onions and tomatoes, then add yogurt and coriander powder. Ensure the yogurt is fresh and not sour. This mixture will not curdle while cooking.

Retrieve the paneer from the water, noting its increased softness and moisture content. Add it to the gravy along with some of the paneer-soaked water.

Finish the dish with garam masala and crushed kasuri methi roasted on a tava for added flavor.
