The Best Breakfast Burrito | SAM THE COOKING GUY 4K

Ingredients:

  • Chorizo, 8 ounces (estimate)
  • Cooking oil, 1 tablespoon (estimate)
  • Diced yellow onion, 1/2 cup (estimate)
  • Eggs, 3 large
  • Kosher salt, to taste (estimate)
  • Black pepper, to taste (estimate)
  • Unsalted butter, 1 tablespoon (estimate)
  • Diced green chilies, 1/4 cup (estimate)
  • Monterey Jack cheese, 1 cup (shredded, divided)
  • Large burrito-sized flour tortilla, 1
  • Sour cream, 2 tablespoons (estimate)
  • Bacon, 4 strips (cooked and chopped)
  • McDonald's hash browns, 3 (or equivalent)
  • Cooking spray or additional oil for the tortilla

Steps:

Begin by cooking the chorizo in a non-stick pan over medium heat. Break it up as it cooks until it is fully cooked and crumbly, about 5 minutes.

In a separate pan, add oil and cook diced onions until they are soft and translucent. Once cooked, move onions to the side of the pan or keep them warm on low heat.

Beat 3 eggs in a bowl, season with kosher salt and pepper to taste, and then cook them in the same pan as the onions. Add butter to prevent sticking if needed. Before the eggs fully set, add green chilies and then Monterey Jack cheese. Cook until the eggs are just set but still slightly moist.

Quickly warm a large flour tortilla in the pan, lightly sprayed with oil or brushed with butter, and then begin building the burrito.

Spread sour cream over the center of the tortilla, then add the cooked eggs with chilies and cheese on top. Add more cheese, the cooked bacon, and then the hash browns.

Spoon the cooked chorizo over the hash browns, and top with the final layer of cheese.

Carefully roll the burrito, tucking in the sides first, and then rolling it up tightly from the bottom to ensure all ingredients are encased.

If desired, you can weigh the burrito for fun but it's optional. The burrito will be hefty.

Slice the burrito in half to reveal the layers of eggs, chorizo, bacon, hash browns, onions, and melted cheese.
