Steps:

1
Introducing the fried rice recipe using ingredients you already have in your kitchen.
2
Prepare your rice: Use leftover rice if available, otherwise cook your rice perfectly.
  • If you don't have leftover rice, follow the steps to cook fresh rice.
  • Start by rinsing your preferred rice type until water runs clear to remove excess starch.
  • Drain the rice completely after washing.
  • Add a drizzle of vegetable oil to a non-stick pot, mix well to keep the grains separate.
  • Pour in one cup of water, swirl to even out the rice, then cook.
3
Cooking and resting the rice: Bring to a boil then let it simmer.
  • Bring rice pot to a boil and then simmer for 10 minutes.
  • Let the cooked rice rest and don't cook too long to avoid burning.
  • You can use the rice to make fried rice immediately or let it cool.
  • Chill the freshly cooked rice in the fridge to reduce stickiness.
4
Choose your protein and vegetables.
  • Beat eggs well and set aside.
  • Chose bacon or other meats as your protein, cut into bite-sized pieces.
  • Use a cup of frozen vegetable mix or choice of fresh vegetables.
5
Start cooking.
  • Add a tiny bit of oil to a carbon steel wok to prevent sticking.
  • Cook bacon until golden and use the rendered fat for flavor.
  • Remove excess oil if needed, leaving about 2-3 tablespoons.
  • Fry the beaten eggs in the bacon fat, brown slightly if desired.
  • Add and cook the vegetable mix until soft.
6
Finish the fried rice.
  • Add the rice, increase the heat to high for 'wok hei'.
  • Season the fried rice with oyster sauce, soy sauce, and dark soy sauce for color and flavor.
  • Toss in diced green onion and mix again.
  • Give it a final taste and adjust the flavor as needed before serving.
7
Serve the tasty, better-than-takeout fried rice that's quick and easy to make.
